How full should the tranny be filled?

1941 Master Deluxe recently removed the tranny and replaced the seal on the side plate that was leaking. 

In the past we always fille the tranny to the level of the fill hole.  In the manual it stated that after removing the torque tube it should be filled to the level of the speedometer gear hole (we had the tranny out of the car).  This is higher than the fill hole.   When can we recheck the level in the fill hole without it still being over the fill hole?  Sitting two days and no leaks but nothing has been started yet.

I'm pretty sure that filling through the speedo gear hole is only after servicing the U-joint. If I'm wrong someone will advise us.

We had everything it off the transmission to remove it so I thought that fell under servicing it.  Either way it has been filled.

The U-joint gets it's oil from the transmission. A little is added through that opening after service so it doesn't run dry while it's being refilled from the transmission. You don't fill the whole transmission through the speedo gear hole.
