I see that someone over at stovebolt.com has recommended a Coker Excelsior Stahl Sport Radial.
It looks like an excellent choice to me, but... only if you can afford them!
They have them in 6.00/6.50x17 https://cokertire.com/tires/excelsior-stahl-sport-radial-600-650r17.html
and a 7.00/7.50x17 https://cokertire.com/tires/excelsior-stahl-sport-radial-700-750r17.html
The 7.00/7.50's are 32 inches tall and the 6.00/6.50's are a little under 30 inches, so you can choose your diameter and go with either one.
As for balancing, the tire shop I use said, as with a 3 ton grain truck, don't bother if you are only driving 50 or 55 mph like I do.
And they were right, I haven't noticed any need for it

@tiny @ole-olson @jgmtrbb97 I found charts that converted old tire sizes to modern radial equivalent sizes. None of them included 17" tires.
17" tires have been used on many vehicles in the last several years. Your tire shop should be able to tell you if any of them are suitable for your rim width. Probably not, but it's worth a try. For the amount of driving you are likely doing in your truck, your old tires are probably good for a while. Otherwise, bite the bullet, wipe away the tears, and ask your wife to sell some of her stuff, so you can pay the ridiculous price for new tires for Coker, et al.
