With 75 ft-lbs on the original head bolts some will streach. Be careful when tightening and stop if the bolts begin to yield. The thrust on the crank should be 0.006" max according to the specs. I am assembling a '31 with 0.008" thrust and it should be ok. If you get in the 0.010" range you might start to get the clunk from the crank moving forward and back. I have one that is between 0.018" and 0.020" and it clunks.

In a word, yes. That is if you want to do it right.

If you don't you can shim the center main thrust surface if the main bearings are otherwise ok. You will need to determine if the wear is equal on both sides (not likely) or not. If it is not then you will need to shim each side enough to reduce the thrust and center the crankshaft. Shims can be cut to fit around the crank journal. Cut the slot to permit opening the shim at a 45 deg. angle to slide it around the journal. Make a tab to fit under the main bolts so it will not rotate. A brass shim should last as long as you will drive the car.

Don't tell anyone that I told you how to do it.
