Is there any reason why I can't use a regular engine stand to hold the engine from my 31? I see a lot of guys making wood dollies to sit the engine on, but that makes if very tough to work on.

Unless you have a very heavy duty stand it is not advised to use a stand if connected to the back of the engine. That is a lot of weight sticking out these and when you are torquing bolts it gets kinda scary.

Scary? I would say dammned scary! I have a heavy duty engine stand (rear mount) rotator and always hook a cherry picker to the front of the engine when wrenching parts on or off of a straight six Chevy engine. I don't like hearing sudden loud noises or instantanous falling 600 pound hunks of iron!
